Supreme Braised Beef

Preparation time: 30 minutes

Cooking time: 2h30

Serves: 2-3

Ingredients:

3 kg Australian Wagyu ribs

2L chicken broth

3g mandarin zest

2g cinnamon

2g star anise

2g bay leaves

10g fresh lemongrass

20g ginger

Seasoning:

15ml light soy sauce

10ml oyster sauce

5g powdered chicken

15 g candy sugar

Method:

1. Bone the beef ribs to clean off excess tissue and fat; then cut the ribs into pieces of about 90 grams each.

2. Heat olive oil, add ginger and lemongrass slices and sauté gently until fragrant, then add tangerine zest, cinnamon, star anise and sauté fry until all the flavor body is released.

3. Fry beef until browned on each side; then add the chicken broth, followed by the rock candy, oyster sauce, light soy sauce and chicken powder to taste. Wait until the broth comes to a near rolling boil.

4. Next, transfer the ingredients from the pot to a saucepan, lower the heat and simmer for 90 minutes. Remove the beef from the broth and serve on the side.
