Healthy Curry Crusted Salmon Recipe with Chilli Braised Napa Cabbage | Seafood

  • 4 skinless salmon fillets, 6 ounces
  • 1/4 tsp salt
  • 1 1/2 tablespoons curry powder
  • 1 1/4 pounds Napa cabbage, trimmed and cut into bite-size pieces
  • 2 teaspoons chopped fresh root ginger
  • 1 cup chicken broth
  • 1/4 teaspoon crushed red pepper flakes
  • 2 green onions, minced

Here’s how to do it:

  1. Gently rub the salt over the salmon until dissolved. Let the salmon rest for about 5 minutes.
  2. Spread the curry powder on a plate and roll each salmon fillet in the curry powder until well coated. Place the salmon on a baking sheet. Bake in preheated 425 degree F oven for about 8-10 minutes.
  3. While the salmon cooks, combine the chicken broth and ginger in a skillet. Bring to a boil. Add cabbage and red pepper flakes. Cover, bring back to a boil, reduce the heat and simmer for about 3 to 5 minutes or until the cabbage is tender. Stir in green onions. Serve the salmon on a bed of cabbage.
