This Saturday is the last week of the 2022 Farmers Market season.

It’s definitely a comfort food for chilly days. Meat and mashed potatoes with a savory sauce are the delicious elements of this dish. Corn and carrots add fall color to this dish.

Braising meat is simply a cooking method that involves browning meat in oil and then cooking it in a small amount of liquid in a covered pan. This infuses flavors and makes even the toughest cuts of meat tender.

The last day of the 2022 Federal Way Farmers Market season is 9 a.m. to 3 p.m. Saturday, October 28. Visit the market in costume to participate in the Halloween costume contest between noon and 2 p.m. Treats and activities await you.

Braised beef (makes 8 servings)

1/4 cup Ancient Trees Greek Extra Virgin Olive Oil

2 pounds round steak

2 cups sliced ​​carrots (Bautista Farms)

2 ears of corn each cut into 4 pieces (Sidhu Farm)

4 garlic cloves, sliced ​​and chopped (Bautista Farms)

1 large onion, sliced ​​(J&E Produce)

1 can (14 ounces) whole cranberry sauce

2 teaspoons kosher salt

1/2 cup of water

1 to 4 tablespoons Best Damn Chipotle Texas Style BBQ Sauce

Fresh ground pepper to taste

8-10 potatoes peeled, sliced ​​and soft boiled to make mashed potatoes (Amador Farms)


1. Preheat the oven to 350 degrees.

2. Cut the beef into large chunks. Heat the oil in a large ovenproof skillet with a lid. Brown the beef pieces on all sides. Reserve on a plate.

3. Cook the onions in the same skillet. Add more oil if necessary. Cook the onion, stirring to clean the sides of the pan of dark meat juices. When the onions are translucent, set aside.

4. Cook the sliced ​​carrots for 5 minutes then add the minced garlic until the carrots are slightly tender.

5. Reserve the carrots. Place the meat in the skillet. Add the cranberry sauce and stir into the meat.

6. Place the onions evenly over the meat. Place the carrots over the onions. Sprinkle salt evenly over the carrots. Pour water over the salt and carrots.

7. Cover and cook for one hour. Take out of the oven, remove the lid and place the cut corn on the carrots. Put the lid back on the pan, return to the oven and cook for another 30 minutes.

8. Remove the pieces of meat and corn. Add Chipotle BBQ Sauce 1 tablespoon at a time, stirring after each until desired spiciness. Serve with mashed potatoes.
