Chef Bud’s Table
Braised cabbage and sausage
½ a large sweet onion, chopped
4 ea sausages, I used jalapeño, sliced
3 slices of bacon, cooked and melted fat preserved
1 tablespoon of olive oil
1 green cabbage, seeded and cut into bite-sized pieces
1 teaspoon of brown sugar
1 cup of chicken broth
McCormick Kosher Salt and Coarse Black Pepper
Cook the bacon over medium heat and save the melted fat
Remove the bacon and cut it into pieces, set aside
In the same skillet over medium heat, add chopped onion, sausage slices, garlic and olive oil to the melted fat. Cook for 4 to 5 minutes or until the sausage is tender. Then add the brown sugar and mix, add the chopped cabbage and the chicken broth. Season with coarse ground pepper and kosher salt.
Cook over medium heat for 20 minutes or until liquid is absorbed and cabbage is tender.
Remove and serve. An excellent dish for cold winter days, or even for big game. When you get people together, it’s a great dish to enjoy at your table. Full of heartwarming flavors and a wonderful addition to your weekly dinners or even weekend gatherings! Enjoy!
