Braised Pork Tacos

Ingredients

1 (4-5 lb) boneless pork shoulder

2 tbsp. vegetable oil

2 tbsp. extra virgin olive oil

2 onions, quartered, root attached

4 large garlic cloves, crushed

1 1/2 tsp. chopped oregano leaves, half a palm

1 red pepper, thinly sliced

2 bay leaves

1 (12 oz.) bottle of Mexican beer

2 cups of chicken broth

4 oranges, juice about 2 cups

Salt and freshly ground black pepper

Preheat the oven to 325 degrees Fahrenheit. Generously season the pork with salt and pepper and let sit at room temperature for 30 minutes. Pat the pork dry with a paper towel. Heat a large Dutch oven or heavy-bottomed pot over high heat with 2 tablespoons of vegetable oil. Place the pork in the pot and brown evenly on all sides, about 10 to 12 minutes. Transfer the pork to a plate and set aside.

Lower the heat to medium-high and add the extra virgin olive oil to the pan. Add the onions, garlic, salt, pepper, oregano, chilli and bay leaves and cook for 7-8 minutes. Deglaze the pot with the beer, scraping up any bits stuck to the bottom of the pot. Stir in chicken broth and orange juice. Return the reserved pork to the pan (the liquid should be about 2/3 of the way up the meat) and bring to a boil. Cover and place the pork in the oven, turning the meat halfway through cooking, until the meat is very tender, about 2 1/2 to 3 hours. Remove the pork from the pot, place it on a cutting board and cover it with foil to keep it warm. When cool enough to handle, separate the meat with two forks.

Combine tomatillo, red onion and jalapeño in a blender. Slowly add olive oil and lime juice. Heat tortillas until warm. Lay flat on a plate and top with pulled pork, fruit salsa and tomatillo sauce. Place braised pork in a flour tortilla and top with fruit salsa and drizzle with tomatillo sauce
